Pistachio Cookies

Servings 24 cookies

Ingredients

  • 1/2 cup shelled, toasted pistachios. (Ground)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/2 tbsp vanilla extract
  • 1 cup flour
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

  3. Beat in egg and vanilla.

  4. Mix in baking soda.

  5. Mix in flour.

  6. Mix in ground pistachios.

  7. On 2 baking sheets lined with parchment paper, place 1tbsp sized balls spread evenly. (~12 per sheet).

  8. Bake for ~20 minutes.

  9. Immediately out of the oven, cut the centers out with a 1.5" round cookie cutters. Throw out (or eat) the edges.
