Preheat oven to 350°F.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Beat in egg and vanilla.
Mix in baking soda.
Mix in flour.
Mix in ground pistachios.
On 2 baking sheets lined with parchment paper, place 1tbsp sized balls spread evenly. (~12 per sheet).
Bake for ~20 minutes.
Immediately out of the oven, cut the centers out with a 1.5" round cookie cutters. Throw out (or eat) the edges.
